Les sp\u00e9cialistes Valora en produits saumur\u00e9s de la Brezelb\u00e4ckerei Ditsch l\u2019ont \u00e9galement ressenti. Par la suite<\/strong>,<strong> ils ont activement poursuivi le d\u00e9veloppement de solutions et produits innovants sur le march\u00e9 B2B. Les d\u00e9cisions prises par l\u2019entreprise avant la crise ont jou\u00e9 un r\u00f4le important \u00e0 cet \u00e9gard.<\/strong><\/p>\n\n\n\n<p class=\"wp-embed-aspect-16-9 wp-has-aspect-ratio\">Les investissements consentis dans les deux nouvelles lignes de production d\u2019Oranienbaum ont port\u00e9 leurs fruits. En 2019\/2020, Valora avait investi dans l\u2019usine voisine de Berlin afin de r\u00e9pondre \u00e0 la demande, \u00e0 l\u2019\u00e9poque accrue, de produits de boulangerie saumur\u00e9s. Mais lorsque les lignes de production sont devenues op\u00e9rationnelles, la crise du coronavirus est survenue, sonnant le glas de l\u2019activit\u00e9 principale, le march\u00e9 du Food Service. Pendant la crise, ils ont permis le remplissage automatis\u00e9 des produits de boulangerie saumur\u00e9s d\u00e9j\u00e0 cuits, qui peuvent aussi \u00eatre emball\u00e9s individuellement sur demande des clients. En 2021, le magazine sp\u00e9cialis\u00e9 <em>tk-Report minus 18<\/em> a m\u00eame d\u00e9sign\u00e9 les bretzels de Sils farcis au beurre aux herbes et \u00e0 l\u2019ail comme la commercialisation la d\u00e9licatement huil\u00e9e) et les bretzels fourr\u00e9s au camembert ont quitt\u00e9 les lignes de production d\u2019Oranienbaum\u00bb, confie Tiemann. \u00abNous travaillons en outre au d\u00e9veloppement de produits existants tels qu\u2019une pizza sans huile de palme, un bretzel dit avec label Clean ou un produit saumur\u00e9 low carb.\u00bb<\/p>\n\n\n\n<figure Gooding parle d\u2019un \u00abprocessus d\u2019innovation structur\u00e9\u00bb d\u00e9j\u00e0 \u00e9tabli avant la pand\u00e9mie. Ainsi, l\u2019\u00e9quipe Research &amp; Development (R&amp;D) a \u00e9t\u00e9 r\u00e9organis\u00e9e \u00e0 temps, avec une \u00e9troite interaction entre les secteurs Distribution, Operations et Business Development.<\/p>\n\n\n\n<p>La r\u00e9orientation de l\u2019\u00e9quipe R&amp;D et des lignes de production s\u2019est \u00e9galement accompagn\u00e9e d\u2019un changement de culture. En 2019, la direction de Ditsch a lanc\u00e9 le d\u00e9veloppement d\u2019un mod\u00e8le de comp\u00e9tences et de valeurs. Aujourd\u2019hui, une quarantaine de cadres sont activement impliqu\u00e9s dans le pilotage du processus de changement. Ils ont accept\u00e9 le processus de changement au cours d\u2019une p\u00e9riode difficile marqu\u00e9e par le ch\u00f4mage partiel et d\u2019importants d\u00e9fis en mati\u00e8re de d\u00e9marrage\u00bb, explique Gooding. \u00abLes collaborateurs ont apport\u00e9 une contribution constructive. Avec la Brezelb\u00e4ckerei Ditsch et Brezelk\u00f6nig, Valora a produit en 2021 environ 730&nbsp;millions de produits de boulangerie sur ses 16&nbsp;lignes de production en Allemagne (Mainz et Oranienbaum), aux \u00c9tats-Unis (Cincinnati, Ohio) et en Suisse (Emmenbr\u00fccke). L\u2019entreprise approvisionne principalement un nombre croissant de clients Food Service ainsi que le march\u00e9 de la vente au d\u00e9tail et de la vente en gros, en plus de ses propres points de vente Ditsch, BackWerk et Back-Factory en Allemagne, des succursales Brezelk\u00f6nig en Suisse et d\u2019autres formats Valora.
